Eggs Benedict is a classic breakfast dish that consists of toasted English muffins, Canadian bacon or ham, poached eggs, and hollandaise sauce. Here’s a recipe for how to make it:

Ingredients

4 English muffins
4 slices of Canadian bacon or ham
4 eggs
2 tbsp white vinegar
2 sticks unsalted butter
4 egg yolks
2 tbsp lemon juice
Pinch of cayenne pepper
Salt and pepper to taste

Directions

Step 1
Preheat the oven to 400°F.

Step 2
Split the English muffins in half and place them on a baking sheet. Toast them in the oven for 5-10 minutes, until they are lightly golden brown.

Step 3
While the muffins are toasting, heat a large saucepan of water over medium heat. Add the vinegar.

Step 4
Crack the eggs into individual bowls or cups.

Step 5
Once the water is just below boiling, gently add the eggs one at a time to the water, taking care not to crack the yolks.

Step 6
Poach the eggs for 3-4 minutes, or until the whites are set and the yolks are still soft.

Step 7
Remove the eggs from the water with a slotted spoon and set them aside.

Step 8
In a small saucepan, melt the butter over low heat.

Step 9
In a separate medium-sized bowl, whisk together the egg yolks, lemon juice, cayenne pepper, salt, and pepper.

Step 10
Slowly drizzle the melted butter into the egg yolk mixture while whisking constantly, until the sauce thickens.

Step 11
Assemble the eggs Benedict by placing a slice of Canadian bacon or ham on each toasted English muffin half, followed by a poached egg.

Step 12
Top each egg with a generous spoonful of hollandaise sauce.

Step 13
Serve immediately and enjoy!

Note: If you're not comfortable with poaching eggs, you can also fry the eggs in a pan or bake them in the oven. To fry the eggs, heat a nonstick pan over medium heat and add a small amount of butter or oil. Crack the eggs into the pan and cook until the whites are set and the yolks are at your desired level of doneness. To bake the eggs, preheat the oven to 350°F and grease a muffin tin. Crack the eggs into the muffin cups and bake for 10-12 minutes, or until the whites are set and the yolks are at your desired level of doneness.
