4 English muffins
4 slices of Canadian bacon or ham
2 tbsp white vinegar
2 sticks unsalted butter
4 egg yolks
2 tbsp lemon juice
Pinch of cayenne pepper

Step 1 Preheat the oven to 400°F.
Step 2 Split the English muffins in half and place them on a baking sheet. Toast them in the oven for 5-10 minutes, until they are lightly golden brown.
