Pot cover noodles is a kind of pasta in Zhenjiang City, Jiangsu Province, China. It gets its name because it is cooked together with the lid in the flour pot below. It has a strong civilian style and is well known in Zhenjiang.


100g vermicelli
3 G cotton sugar
30g green head
20G cooked lard
5 ml sesame oil
20ml soy sauce
Proper amount of salt
A tablespoon of old godmother


Step 1
Prepare ingredients: noodles and green head (green head is noodles made of various vegetables, I use cucumber, green pepper, long beans, and some sausage); green head is cut into strips of about 4cm

Step 2
Pour an appropriate amount of water into the pot and boil until boiling. Add an appropriate amount of salt. The amount of salt is more than that when cooking. Put the long beans and cucumber into boiling water and blanch for about four minutes, then add green pepper. When the green pepper is almost cooked, add sausage and cook for one minute. Remove all of them for use

Step 3
Put water into the pot to boil, add noodles one by one according to the number of people, cover the small pot, and remove the noodles after cooking

Step 4
Prepare cooked lard and sugar, add some water to boil, add sugar and lard, dissolve the sugar, add soy sauce, then add a little salt, mix well and turn off the fire

Step 5
Put the boiled green head on the noodles, then pour the soup in step 4 into the bowl, sprinkle with sesame oil, put some old Ganma, mix well and serve.
