Yu-Shiang Eggplant
When it comes to eating, the first thing in my mind is fish flavored eggplant. This fish flavored eggplant is different because there are really fish in it! Take a bite and you can’t stop.
Ingredients
500g eggplant150g minced pork
50g salted fish
30g bean paste
30g raw soy sauce
A piece of ginger
2 cloves garlic
3 g white granulated sugar
50g shallot
1 tablespoon vinegar
15g cooking wine
Directions
Step 1
Wash the eggplant and cut the skin into about 8 cm long
Step 2
Deep fry eggplant in oil pan until light golden, remove, drain and set aside.
Step 3
Mix raw soy sauce, bean paste, white granulated sugar, water, vinegar and cooking wine into a bowl of sauce for standby.
Step 4
Leave oil in the pot, add minced garlic, ginger and salted fish until fragrant. Add minced pork and fry until done. Add sauce, stir and boil.
Step 5
Add eggplant and cook for about a minute. Adjust starch paste, add, sprinkle scallion, finish.
