Every time when I went to a restaurant in college, I would order a dish!!!

3 eggplants
100g pork
1 spoonful Pixian bean paste
Appropriate amount of corn starch
1 teaspoon of soy sauce
3 slices of ginger
4 cloves of garlic
2 tbsp sugar
1 teaspoon vinegar
Half a spoonful of soy sauce
2 chives
1 caraway

Step 1
Cut coriander, scallion, ginger and garlic. Cut the meat into small pieces. You can use streaky pork. It tastes better.

Step 2
Wash and slice eggplant( I'm in a bit of a hurry today. It's a bit too big

Step 3
Dry the pan, pour in the vegetable oil, heat the oil over high heat, and deep fry until the surface is golden.

Step 4
The fire blasted all the strips until golden. Crisp on the outside and tender on the inside.

Step 5
In the middle of deep frying, add soy sauce, vinegar, soy sauce, sugar and starch into half a bowl of water to make sauce.

Step 6
After slicing and frying, leave a little oil in the pan, pour in the meat and stir fry.

Step 7
Stir fry until the meat is discolored. Add a spoonful of Pixian bean paste. Stir fry the red oil.

Step 8
Add onion, ginger and garlic and stir fry.

Step 9
Pour in the fried eggplant. Pour the sauce into the sauce. Stir fry quickly and collect the juice over high heat.

Step 10
It's out of the pot
