200 grams of pork
200 grams of garlic
5 tbsp peanut oil
1 green pepper
0.5 teaspoon black pepper
1 teaspoon refined salt
1 tbsp soy sauce
1 tbsp cooking wine
1 tbsp Pixian bean paste
A section of green onion
Two slices of ginger
1 teaspoon soft sugar
1 tbsp pepper


Step 1
The big one is a spoon and the small one is a teaspoon.

Wash the pork and put it into a pot of clean water. Add 1 tbsp pepper, 2 slices ginger, a section of green onion and 1 tbsp cooking wine. Light the fire and bring the water to a boil.

Bring to a boil and simmer on low heat for three minutes.

Take out the cooked meat, rinse the surface with clean water, control the water to dry and set aside.

Add 5 tbsp of cooking oil into the frying pan and heat it to 50% heat (slightly smoky).

Dry the pork with kitchen paper, put it into a frying pan and fry it over medium heat. Be sure to suck up the water before frying, or you will be injured by oil splashing.

Fry each side for one minute, turn over, fry both sides until golden, then turn off the heat.

Slice the fried pork and set aside.

Pick and wash the garlic and cut it into small pieces.

Wash the green peppers, remove the seeds and tendons, cut into strips and set aside. Of course, side dishes can also be more abundant, such as adding some fungus, carrot slices, cabbage leaves and so on.

Leave a little base oil in the frying pan, heat it up and add scallion and ginger slices to make it smell.

Add in the sliced meat and stir fry a few times.

Add 1 tbsp Pixian bean paste, stir fry quickly and evenly, stir fry the red oil.

Put the chopped green peppers into the pot and stir fry for one minute. Add other side dishes, except garlic. Add 1 tbsp soy sauce, 1 tbsp cooking wine, 1 tbsp sugar, half tbsp salt, half tbsp black pepper and stir well.

The garlic is easy to be cooked. Add it before you come out of the pot. Stir over high heat for half a minute. Turn off the heat and come out of the pot.
