Tuesday is usually tacos night at my House. With kids sports and stuff I sometimes get overwhelmed… Today before leaving I put 3 chicken breast in the slow cooker covered them with salsa (mine was homemade the nigh before but store bought will do the trick) and cooked them on low for 5:30 hours…. Came home after baseball pulled it out and made chicken and bean enchiladas, topped it with the sauce from slow cooker and sprinkled with cheese, out in the oven for 10-15 minutes et voila. That chicken was meltingin my mouth, it was so juicy and tasty!!!

1-2 cups Salsa ( homemade or store bought will do the trick)
6 wholewheat tortillas
1 avocado, cubed
1 cup Mexican cheese
