Step 1

Soak potatoes in cold water for 5 minutes after slicing to remove starch. Cut eggplant for standby (eggplant should not be cut early, it is easy to oxidize and blacken. Cover it with a cover or plastic wrap after cutting to prevent oxidation). Chop onion and garlic

Take out the potato chips and control the water, or wipe the water in the kitchen for standby

Add an appropriate amount of oil into the frying pan, saute five spice powder, onion and a little chopped garlic, add potato chips and stir fry

Stir fry until the cut is soft. Add potato chips and stir fry. Add a small bowl of vinegar, salt, sugar and oyster sauce. Do not add oyster sauce and add some soy sauce. Add a little starch and mix evenly. Add seasoning into the pot, add the remaining garlic and stir fry evenly.
