Stewed potato and eggplant with beans
I like to eat stew in winter. It’s soft, rotten and delicious. Easy to digest and warm the stomach.
Ingredients
250g beansTwo potatoes
An eggplant
A spoonful of vegetable oil
Two tablespoons soybean paste
A spoonful of salt
Appropriate amount of scallion

Step 1
Cut the potatoes into pieces
Step 2
Beans and eggplant are broken into segments
Step 3
Stir fry scallion in hot oil
Step 4
Add soy sauce and water, cover the pot and simmer for a few minutes, add salt and bring out of the pot.
