Pickled cabbage is one of the famous dishes in Northeast China, and it is also a home cooked dish loved by northeast people. Sauerkraut is not only delicious, but also appetizers and invigorates the spleen, moistens the intestines and defecates, sterilizes and anti-inflammatory, and promotes digestion. It is suitable for all ages, especially for people with poor appetite.


2 packs of pickled cabbage
5 pig neck bones (proper amount)
Proper amount of pork (fat and lean)
Proper amount of vermicelli
Appropriate amount of scallion flowers
3 ginger slices
1 large material (star anise)
3 tablespoons salt
1 tablespoon chicken essence
2 tablespoons soy sauce
Proper cooking wine


Step 1
Prepare all the required materials. I left the pig neck bone before. After buying the pig neck bone, scald the blood with water and soak it in cold water. Do not press the pig neck bone with a pressure cooker. The pig neck bone can be bitten after stewing for about 15 ~ 20 minutes.

Pork slices, not too thin. The meat slices of stewed pickled cabbage are thicker and delicious.

Wash sauerkraut with water for 3 times and clean the fine sand of sauerkraut. Don't use blisters in sauerkraut, which will affect the sour taste of sauerkraut.

After washing pickled cabbage for 3 times, control the water.

Fire, burn oil, heat the oil and put in a large material.

Add the sliced meat and stir fry. Some people like to fry the meat with scallion, ginger and garlic first. I think it will be better to eat the meat with scallion, ginger and garlic later. This is the result of my repeated experiments.

Stir fry the meat slices to change color, add an appropriate amount of cooking wine to remove the fishy smell of the meat, and continue to stir fry.

The meat slices are basically cooked. Add the pig neck bone and stir fry.

Add onion, ginger and garlic and stir fry.

Pour in 2 tablespoons soy sauce and stir fry.

Pour in sauerkraut and continue to stir fry.

Add a bowl and a half of water and add more as much as possible, because finally, you have to put vermicelli. Vermicelli suck soup very much.

Add 3 tablespoons of salt, (season to your taste)

Cover the pot and simmer over medium heat. Bring to a boil and simmer for 15 minutes. After 15 minutes, see if the pig neck bone stew can bite. If it is a little hard, stew for another 5 minutes.

At this time, soak the noodles in warm water for 3 minutes. I use potato noodles. Noodles depend on personal taste. Potato powder and potato powder are OK. (or wide powder is also delicious)

Dry the noodles soaked for 3 minutes and set aside.

Put the soaked vermicelli into the pot, cover the vermicelli with sauerkraut and stew for 2 minutes. Try the vermicelli. When it's cooked, you can come out of the pot.
