Winter is a good season to eat mutton. Many people like to eat mutton. Every family has its own way to remove the smell of mutton. My favorite food is boiled mutton with white radish. It’s great to eat fragrant mutton and drink fresh mutton soup when I’m free at the weekend

Ingredients

800g mutton
1 white radish
3 slices of ginger
2-stage scallion
1 tablespoon rice vinegar
15 pepper
Proper cooking wine
Proper amount of salt
Proper amount of pepper
10 medlar seeds

Directions

Step 1
Clean the mutton and cut it into pieces about 4cm square

Step 2
Soak in water for more than 2 hours, soak the blood out, and change clean water several times in the middle

Step 3
Prepare other ingredients during soaking mutton. First cut off 2 large pieces of white radish (used to remove the smell of mutton when blanching mutton), and cut the rest into pieces of about 4cm, 3 pieces of ginger and 2 pieces of green onion

Prepare boiled mutton: add cold water to the pot, add the soaked mutton, put in two pieces of white radish, and then add pepper and a spoonful of rice vinegar( Pepper and rice vinegar can effectively remove the smell of mutton, while radish can absorb the smell of mutton)

Step 5
Boil the foam over a high fire, skim it out with a leaky spoon, and cook for about 5 minutes without foaming

Step 6
Blanch the mutton and serve it out( Throw away the two pieces of white radish in the pot

Step 7
Next, stew mutton: put the boiled mutton into the electric rice cooker, add hot water, put scallion and ginger slices, pour in an appropriate amount of cooking wine, and start stewing. The mutton should be stewed for about 2 hours( Add enough water at a time. Add more Lamb Soup if you like. You can put all kinds of big ingredients according to your own taste)

Step 8
Stew the mutton for about 1.5 hours. Put the white radish in and stew for at least half an hour until the radish and mutton are cooked

Step 9
10 minutes before coming out of the pot, add medlar and season with salt and pepper
