Lao Dou doesn’t eat pork, so he likes fish. He likes everything he does. This is the first time that I make minced pepper fish head for him. I hope our dear Lao Dou can eat minced pepper fish head when he comes home!


500g fish head
1 / 2 tsp salt
1 small piece of ginger
5 cloved garlic
1 teaspoon cooking wine
3 spoonfuls soybean oil
6 tbsp chopped pepper
6 pieces of Perilla
Moderate Baijiu


Step 1
Sprinkle salt on fish heads (if the salt content of chop pepper is heavy, pickle fish less or salty), add appropriate garlic, ginger and a little Baijiu for 10~15 minutes.

Step 2
Add a layer of Perilla on the pickled fish head (to remove the fishy smell), then boil the water, steam the fish head with water for 10-15 minutes after the water boils, and then take out the steamed water (the water steamed for the first time is fishy) to remove the fishy smell.

Step 3
Add chopped pepper to fish head, then add some bean oil, and finally put into steamer.

Step 4
After cooking in a frying pan, add oil, then stir fry the ginger and garlic in oil, and finally pour them on the fish head.
