1000g fish head
1 tablespoon salad oil
3 g salt
Small spoonful of soy sauce
1 teaspoon vinegar
30g ginger
1 star anise
20 Chinese prickly ash
2 teaspoons cooking wine
1 teaspoon of soy sauce
1 teaspoon oyster sauce
1 teaspoon sesame oil
200g chopped pepper
2 red peppers
8g shallot
8 cloves of garlic
1 tsp sugar
2 tsp steamed fish and soy sauce
5g scallion
A little pepper

Directions

Step 1
Remove the gills from the fish head (it's best to take an inch of fish meat under the fish head), remove the scales from the next section of fish meat, and remove the residues in the fish bore, especially the black film

Step 2
Then split the fish's head vertically from the chin side to form two connected halves. Put it into a basin, pour in 1 teaspoon of soy sauce, 1 teaspoon of cooking wine, 1 teaspoon of oyster sauce, appropriate amount of salt inside and outside, and marinate for more than 10 minutes to make it taste good at the beginning

Take a large plate and spread the sliced ginger on it
