1 chicken leg
2 teaspoons cooking wine

3 cloves of garlic

1 tsp sugar (sauce ingredients)

Proper amount of peanut oil
2 tbsp chili oil (sauce ingredients)
A little sesame oil
A little celery
Appropriate amount of salt

2 tbsp peanut chips


Step 1
Wash the drumstick and put it into a cold water pot. After boiling, blanch it to remove the blood foam. Put the drumstick into another pot of boiling water and add the seasonings such as cooking wine, scallion, ginger, garlic, Zanthoxylum, star anise and fragrant leaves. All these can effectively remove the fishy smell of chicken. After boiling the water in the pot, turn it to medium heat. Cook it for 15 minutes. Insert it into the meat with chopsticks. It's easy to insert it. No blood water flows out, indicating that the chicken leg is cooked. If it's just right, don't cook it again. Then turn off the heat and simmer for 10 minutes. This simmer is very important, that is, soak the chicken to keep the integrity of the skin

In the process of cooking chicken legs, you can put a small basin of pure water into the refrigerator for half an hour, or ice is also good. Put the chicken legs into the ice water to make the chicken legs cool completely. When the cold water is stimulated, the skin of the chicken is very crisp and not greasy. We all choose the skin of the chicken first. The skin of the chicken is the most delicious, crisp and tender

Chop the onion, ginger, garlic, celery and parsley. Prepare the chili oil and peanuts. Even if you have coriander, you should put some celery. Celery makes this dish of chicken very fragrant. Don't forget to put it on when you make it
