1 Wenchang Chicken
1 / 2 scallion
2 tbsp oyster sauce
1 whole garlic
A few drops of sesame oil
3 slices of ginger
2 tbsp cooking wine
50g peanut (fried)
2 tbsp red oil
2 teaspoons spicy chicken with red oil
3 teaspoons soy sauce
1.5 tbsp vinegar
1 tsp sugar

Directions

Step 1
Wenchang Chicken, after washing, drain for use, boil a pot of water, add onion, ginger, cooking wine, and then put the chicken into the boiling water, after the skin is tight, about ten seconds, take out and put it in cold water (ice water effect will be better). Repeat this three times, this way can make the chicken skin taste more crisp, and then stew the chicken with a small fire for about 8 minutes.

Step 2
Take out the chicken and soak it in cold water. When the temperature of the chicken cools, take it out and drain it

Step 3
Put chopped garlic, sugar, soy sauce, oyster sauce, vinegar, sesame oil, red oil, chicken with Laoganma flavor into a bowl of sauce

Step 4
Cut the Wenchang Chicken into small pieces and put it on a plate
