Summer Essentials


1 chicken
Half root scallion
Half a spoonful of salt
A little coriander
30g minced garlic
A little chicken essence
2 teaspoons spicy oil
4 bowls of ice
4 bowls of ice water
A little spicy millet
A little white sesame
6 slices of ginger
2 tbsp cooking wine
20G peanut kernel (roasted)
2 tbsp red oil
2 tbsp peanut butter
2 tbsp soy sauce
1.5 tbsp rice vinegar
1 tsp sugar


Step 1
Wash the chicken after buying it, cut it on the opposite side, boil water in a hot pot, add two pieces of ginger and a little cooking wine, and put down the chicken after boiling.

Step 2
After boiling for another two or three minutes, take out the chicken and put it in ice water. After the chicken is completely cooled, put the chicken in the pot. The water is always on. Remember, if you take out the chicken and put it in again, remember that the water is boiled before you put it in the pot.

Step 3
Repeat the first two steps five or six times. After the chicken is cooked, don't put it in ice to cool it. Just put it in cold boiled water to cool it. If you don't know whether the chicken is cooked well, you can cut a hole to have a look. Ice and water should be prepared in advance. The chicken can be cut after cooling with cold boiled water. The last cooling time should not be too slow. Remember, prepare more bowls of cold boiled water.

Step 4
Two teaspoons of sesame oil, a little vinegar, a teaspoon of soy sauce, a little wine (a little), an appropriate amount of chicken essence, an appropriate amount of salt, two tablespoons of spicy oil (depending on whether you like spicy), a teaspoon of red oil, two spicy millet, minced ginger and garlic, roasted peanut seasoning, mix well, put the cut chicken, sprinkle with white sesame and scallion.
