There are many versions of Mapo Tofu. In each version, there are two indispensable materials. One is Zanthoxylum bungeanum. If Mapo Tofu wants to be hemp, it must use Zanthoxylum bungeanum. The other is red pepper. You can use dry pepper or chili oil, but you have to be intimate with pepper.

Step 1Cut tofu into equal size pieces, shredded ginger, chopped pepper, chopped green garlic, chopped lean meat, chopped garlic after flattening, chopped bean drum slightly.
Step 2Add proper amount of water to the pot. After the water boils, blanch the tofu in boiling water.

Step 5Add garlic, ginger and pepper to stir fry until fragrant.

Step 7Add tofu and stir fry gently.
Step 8Add salt and two drops of soy sauce, a small bowl of water, simmer for about three minutes.
Step 9Pour in crushed pepper and garlic sprouts, stir fry and serve.
