Step 1
First remove the scales of the bass, then remove the internal organs of the bass, cut at the tail, walk slowly along the back, and pat hard after reaching the head to separate the bass from the middle. Be careful not to cut the internal organs or cut off the stomach.

Step 2
Cut the surface of the bass obliquely with a flower knife, insert ginger slices into the flower knife, pour a little cooking wine, apply a little salt, and marinate for about ten minutes.

Step 3
Spread some scallion on the microwave steaming bowl, put the pickled bass on the scallion, and cook over high heat for 10 minutes. When steaming fish, a large amount of soup will be precipitated. These soup is where the fishy smell of steamed fish is, so don't use them. Pour another boiled soup on the fish, so that the fishy smell will be gone.

Step 4
When cooking bass, we can prepare to pour juice, heat the oil pan, pour the minced ginger and garlic into the pan, stir fry until fragrant, then pour in green and red pepper and stir fry slightly.

Step 5
Pour in a glass of water, bring to a boil, add two spoonfuls of raw soy sauce and one spoonful of cooking wine, add an appropriate amount of salt, cook slightly until the soup is thick, pour the soup on the steamed fish and get out of the pot.
