This is the “squirrel yellow croaker” learned from a teacher. I didn’t buy the 750g big yellow croaker used by the teacher. I only bought this small yellow croaker. It doesn’t seem to affect the appearance after frying in an oil pan, but the taste is really great~~~

Ingredients

165G yellow croaker
17g green beans
60g tomato sauce
600g mustard oil
50g raw meal
1 tablespoon salt
3 G chopped green onion
2G ginger foam
20G white granulated sugar
7g mashed garlic
1 tablespoon cooking wine
1 tablespoon fish sauce
1 / 2 tsp five spice powder

Directions

Step 1
Prepare relevant ingredients: onion, garlic and garlic

Step 2
Wash the yellow croaker after removing scales, gills and internal organs. Cut the fin on the side of the fish about 3cm with a straight knife to the bone

Step 3
Then put the knife flat and chamfered for about 2.5cm

Step 4
Use the above method: cut the two sides of the fish body in turn and cross the flower knife

Step 5
Use 1 tablespoon salt, 1 / 2 tablespoon sugar, 1 tablespoon cooking wine, 1 teaspoon fish sauce and 1 / 2 teaspoon white pepper to mix and smear the fish inside and outside, and marinate for 10 minutes.

Step 6
Add water to the dish, add green peas, heat over high heat for 1.5 minutes, remove and drain

Step 7
Mix the cornflour with an appropriate amount of water until the cornflour paste is thick

Step 8
Pour 600g mustard oil into the wok and heat over high heat

Step 9
Lift the fish tail bar, wrap it in the raw meal paste and hang it evenly

Step 10
When the oil temperature is 70% hot, lift the fish tail with one hand and grab the spatula with the other hand, and gently slide the fish into the oil pan

Step 11
Put the fish into the pot, push the fish tail with a shovel in the left hand to make the fish body semi-circular, and continue to pour hot oil on the fish with a spatula on the right

Step 12
Until the surface of the fish becomes golden and crisp, remove the fish and put the tail up on the plate

Step 13
In another oil pan, saute chopped shallots, ginger and garlic

Step 14
Put an appropriate amount of water into the pot, add white sugar and 1 pinch of salt and bring to a boil

Step 15
Then pour in tomato sauce, mix and stir fry

Step 16
Pour in a little newly mixed starch paste and stir fry into thick sauce. Stir fry green peas and turn off the heat

Step 17
Pour the tomato juice over the fried yellow croaker
