1 silver carp head
1 / 2 tsp salt
4 slices of ginger
2 teaspoons cooking wine
1 tbsp sesame oil
1 chive
230g chopped pepper
50 ml vegetable oil


Step 1
After the fish head is washed, cut it from the body, cut it in half into two parts connected with the skin, and wipe the water on the inside and outside surface of the fish head with kitchen paper towel

Step 2
Sprinkle a little salt and cooking wine on the fish head, evenly spread on the inside and outside of the fish head, put in the chopped scallion and ginger, marinate for 10 minutes

Step 3
Add vegetable oil into the pot, heat up and add scallion and ginger slices. After frying, strain out the scallion oil and set aside

Step 4
Take out the scallion and ginger slices and spread them on the plate. Put the salted fish head and skin upward on the plate. Spread a layer of chopped peppers evenly on the plate. Steam in the steamer with high heat for about 10 minutes. After taking out, drain the excess water from the plate. Heat the scallion oil and pour it on the plate while it is hot

Step 5
Drizzle with a little sesame oil and sprinkle with scallions
