Spicy anchovy


80g anchovy (cooked)
Right amount of Zanthoxylum bungeanum
3G dry pepper
Moderate amount of blended oil


Step 1
Soak anchovies in water overnight to remove some salt

Step 2
Drain and let part of the water evaporate

Step 3
Stir fry anchovies in hot oil over low heat

Step 4
Add Chinese prickly ash and dried chilli when anchovies are ready to dry

Step 5
Stir fry until fragrant
