Today, I share a dish of garlic spareribs. It tastes very chewy, scorched outside and tender inside. It has a strong smell of garlic, and the bones are fragrant when chewed

400g spare ribs
Proper amount of ginger
8g oyster sauce
A little salt
8g cooking wine
10g raw soy sauce
30g garlic
8g white granulated sugar
15g corn starch
Proper amount of white pepper

Step 1
Pour the ribs into a large bowl, add minced garlic and ginger, and then pour cooking wine, soy sauce, oyster sauce, sugar, salt and white pepper

Step 2
Stir well, cover with a layer of plastic wrap and marinate for two hours

Step 3
Put starch into the marinated ribs and stir well

Step 4
The oil temperature is 50% hot. Put the spareribs into the pot. The oil temperature should not be too high, otherwise they will be cooked outside. Turn over more halfway and fry for about 12 minutes. When the surface is yellowish, take them out

Step 5
Wait for the oil temperature to rise again, pour the ribs in quickly, fry for about 30 seconds, and then quickly scoop it out
