Cantonese people like to use Douchi as seasoning to cook Cantonese food, steamed fish, steamed meat and steamed ribs. Among them, spare ribs with soy sauce is my favorite. It’s also one of the dishes that you must order every time you eat Cantonese morning tea. The ribs are fresh and juicy, and the flavor of black bean is rich. Cooking by steaming, it keeps the original flavor of the ribs, healthy and less oil. It’s really nutritious, delicious and healthy!

Ingredients

250g ribs
1 tsp Douchi
A few cloves of garlic
2 tbsp cornmeal
1 teaspoon sugar
Right amount of white pepper
1 shallot
Proper amount of oil

Directions

Step 1
Chop the ribs into small pieces

Repeatedly rinse with cold water 5-6 times, while washing and squeezing to remove the blood inside the ribs

Drain the washed spareribs and put them into a bowl. Add the cornmeal and salt and stir well

Cool water and spareribs flat, soak for one hour

Take a large spoon of Douchi

Rinse with cold water several times to remove the skin

Dry the Douchi with kitchen paper

Put two spoonfuls of oil in the pan. When it's 40% to 50% hot, put in Douchi and fry until fragrant
