A big potato
1 eggplant (purple skin, long)
About 5cm scallion white
3 cloves garlic
1 teaspoon (5g) sugar
1 tbsp (15ml) of soy sauce
1 tablespoon chicken essence
Step 1Cut potatoes and eggplant. Tear green or sharp peppers into small pieces by hand.
Step 2Put oil in the pot, heat it, pour in potato pieces and fry until the surface is golden. I've blown this up a little.
Step 3Remove the fried potato chips. Use the remaining fried eggplant in the pot, fry it to golden yellow and take it out.
Step 4Leave a little oil in the pot, saute onion, garlic and pepper, pour in soy sauce and continue to stir fry.
Step 5Heat the water without green pepper, add salt and chicken essence, and bring to a boil.
Step 6Pour in the previously fried eggplant and potato chips, cook for about 1 minute, thicken with water starch, and then come out of the pot.
