I believe many people have eaten a delicious dish called “rattan pepper fish” in the hotel. It is delicious and nutritious. It is also a very classic Sichuan dish. For Sichuan people who are good at capturing spicy taste, it is one of the indispensable dishes for entertaining guests during the new year’s festival.


50g herring 1
200g bean sprouts
100g lettuce
1 egg
1 tablespoon bean paste
1 tablespoon cooking wine
4 tablespoons salt
Proper amount of dry pepper
1 tablespoon golden dragon, fish, rattan and pepper oil
Appropriate amount of edible oil
Appropriate amount of onion, ginger and garlic
Appropriate amount of fresh rattan pepper


Step 1
Remove the head and tail of the herring, cut it in two from the middle, and cross cut it with a knife to remove the fish bone in the middle.

Cut the fish obliquely into thin slices.

Rinse the fillets so that they don't feel sticky. (Flushing under running water is better.)

Step 4
Wash the fish fillets, drain and put them into a bowl, add 3 tablespoons of salt and cooking wine, and grasp them evenly in one direction with your hands. (be sure to follow one direction until the fish thickens.)

Egg separate the egg white and yolk and beat the egg white into a bowl.

Continue to add starch, grasp it evenly by hand, wrap the fish with a thin layer of starch, and then let it stand for about 10 minutes. (the processed fish fillets can also be refrigerated in the refrigerator for a while, which is better.)

Boil some water in the pot, add bean sprouts and salt, and blanch the bean sprouts for use.

Put lettuce at the bottom of the large bowl, and then add boiled bean sprouts.

Put fish fillets in the pot. (the fish fillets should be put into the pot one by one, otherwise they will stick together. The action should be fast, otherwise the fish fillets put into the pot first will be easy to age.)

Cook over medium high heat for about 2 minutes until the fish turns white, slowly float to the water surface, see the floating foam overflow, quickly take out the fish fillets and soak them in cold water to make the meat of the fish fillets more compact, tender and smooth. (fish fillets are easy to cook and should not be cooked too long, otherwise they will be very firewood.)

After soaking for a few minutes, take it out and put it in a large bowl.

Wash the pot, pour in an appropriate amount of bottom oil and heat it. Add garlic slices, scallion, dry pepper and bean paste. Stir fry until fragrant.

Pour in an appropriate amount of water, add 1 teaspoon of salt and bring to a boil.

Pour the hot soup into the fish bowl.

Sprinkle the bowl with scallion, minced garlic, dried pepper section, golden dragon fish rattan pepper oil and fresh rattan pepper. (golden dragon fish rattan pepper oil is boiled with fresh fruit of rattan pepper to retain the fragrance of rattan pepper, which is more suitable for rattan pepper flavor cuisine; it tastes fragrant and has a long aftertaste.)

Pour a spoonful of hot oil to stimulate the flavor of the seasoning. (hot oil is to heat the edible oil directly in the pot until it smokes.)
