My brother loves fishing, so I have to bring some back every time when I go back to my mother’s house. This time it’s all wild crucian carp, which is most suitable for barbecue or crispy stew. Considering that I like fish but I’m always tired of fish bones, I took the way of crispy stew. The crispy crucian carp is soft and delicious. It can be eaten and taken in the refrigerator without heating.

Ingredients

Proper amount of crucian carp
Appropriate amount of edible oil
Half root scallion
2 single garlic
Two pieces of ginger
Four octagons
A piece of cinnamon
Five dried peppers
Proper amount of pepper
Three tablespoons vinegar
A spoonful of sugar
A spoonful of soy sauce
Two tablespoons cooking wine
Proper amount of rock sugar

Directions

Step 1
Wash the fish, remove gills and internal organs, and dry in a ventilated place.

Step 2
First add a spoonful of salt into the pot, then add edible oil and heat it over high fire. The advantage of this is to prevent the fish skin from sticking to the bottom.

Step 3
When the oil temperature rises to 80%, paste the dried fish in the shade with kitchen paper to remove the surface water, and fry it in oil until golden and crisp. Note that the fish must be deep fried, so avoid the surface blackening due to high oil temperature. It can be fried slowly over medium fire.

Get all the ingredients ready.

Take the green onion section and half of the ginger slices and spread them at the bottom of the pressure cooker.

Take a spoonful of fried fish oil, add a spoonful of sugar and stir fry until melted, and then add star anise, cinnamon, ginger, garlic, pepper and pepper to stir fry until fragrant. Then cook the cooking wine and an appropriate amount of water, cover the pot and bring to a boil, add 1 tablespoon of salt (determined according to the amount of fish) and soy sauce.

Step 8
Put the fried fish into the pressure cooker, pour vinegar on it, and then spread an appropriate amount of rock sugar.

Step 9
Pour the soup cooked in step 7 on the fish, cover the pot, and cook for about an hour after the pressure cooker is steamed. This dish is very suitable for the elderly and children. It is also a good choice for wine and dishes.
