This noodle is the most typical family meal in Xianju. Roll the noodles by hand, add some shredded meat, add water bamboo shoots, pick a handful of leeks in front of the house, and a delicious meal of leek noodles with oil will be completed.


300g flour
50g leek
150g pork
3 Zizania latifolia
4 tablespoons salt
1 tsp lard
1 tablespoon raw soy sauce
1 tsp starch
1 tablespoon peanut oil
1 egg
120 g water

Put the flour in a clean basin and beat with 1 egg, 1 teaspoon salt and 120 grams of water

Mix the dough evenly. I press it with a machine, so it doesn't need to be particularly smooth. If you roll it by hand, the dough should be smooth before rolling

Press all the noodles and sprinkle some dry powder to prevent sticking

Shred pork and marinate with salt, rice wine and starch for 10 minutes
