Pajeon are savory Korean pancakes loaded with squash and fried so it is crispy on the outside and soft on the inside.


2 medium Mexican Squash
2 large jalapeƱo
2 cups all purpose flour
1 pinch salt
3 tablespoons dried shrimp powder


Step 1
Julienne baby Mexican squash into matchsticks and finely chop jalapeƱos

Step 2
If you can't find dried shrimp powder, you can usually find them dried and whole that you can pulverize yourself. Otherwise substitute with 1 tbsp light soy sauce.

Step 3
Preheat frying pan with 1 tbsp vegetable oil to medium high heat. Ladle batter and spread to make a thin (2-3 layers of squash) pancake to cover the bottom. Fry for 5 minutes or until nicely golden on each side.
