Luohanzhai, also known as “luohancai”, was originally a famous Buddhist Zhai. This dish is named after the gathering of eighteen Arhats. It is a “family photo” of the temple flavor. It is elaborately cooked with 18 kinds of fresh and fragrant raw materials and is the top grade of vegetarian dishes. Luohanzhai is not a specific dish, but a general term for mushrooms, fungi and vegetables. Therefore, people’s understanding of this dish is a kind of “following fate” attitude, and has something in common with the spirit of Buddhism. Its taste is smooth, soft and rotten, with the characteristics of salty, fresh, delicate and elegant.

Ingredients

Three fresh mushrooms

Directions

Step 1
Preparation of food materials is a tedious thing, because there are many kinds, what I prepare is the family photo of "Eighteen Arhats", each quantity is not much, Lentinus edodes, mushroom are easy to buy, straw mushroom may not have, so I use Agrocybe chashugu to replace, and other vegetables, it is good to prepare seasonal vegetables, generally beans, melons and fruits as the first choice, leafy vegetables as a supplement.

Step 2
Wash the dried vegetables and soak them in water before cutting them.

Step 3
Blanch the peas and mushrooms with boiling water, or put the boiling water in the pot for once, so that the fried vegetables are easy to cook. In fact, some melon vegetables can also be burned with water, but I prefer raw vegetables with a little taste, so there are no vegetables.

Cut up the vegetables and fruits and set them aside.

Put the oil in the pot and stir the garlic and ginger slices until yellowish.

Step 6
Stir fry the cut dried vegetables in the pot, day lily, agaric, tremella, Yuzhu, Tricholoma matsutake, and add Lentinus edodes, mushroom and tea mushroom. Stir fry for four or five minutes, add more salt, add some soy sauce according to your taste, continue to stir fry for one minute, and then simmer for one minute.

Step 7
Stir fry the dried vegetables, add the vegetables, fruits and peanuts, and stir fry them together.

Step 8
Stir fry until slightly cooked, add the starch into the water, pour into the pot, and then mix the raw oyster sauce into the pot, stir fry for a while, then collect the juice.

Step 9
Add a few drops of sesame oil after frying. Although it can be regarded as material, it tastes delicious and delicious. I can't help coming to eat. It's nutritious and delicious.
