Spring is coming. It’s time to eat leeks, and it’s time to eat leek boxes!
20G shrimp skin
1 tbsp sesame oil
1 teaspoon salt
Appropriate amount of edible oil
Step 1Prepare the ingredients.
Step 2Clean the leeks, control the water and chop them.
Step 3Add a little salt to the eggs to break them up. After the oil in the pot is hot, pour in the egg liquid, fry and crush them with a spatula.
Step 4First put the leek into a small basin, pour in an appropriate amount of sesame oil and mix well, so as to prevent the leek from flowing out of water, and then put in the fried broken egg and shrimp skin.
Step 5Add salt and mix clockwise（ It's best to do this step when wrapping. The salt is put early (leeks are easy to water out)
Step 6Put the flour into the basin, pour 70g hot water, quickly stir it into small pieces with chopsticks, add 30g cold water, knead it into dough, cover it with plastic wrap and wake up for about 20 minutes（ The scalded noodles are not easy to knead, and they are easy to knead after waking up)
Step 7Knead the dough until smooth, rub it into long strips, and then divide it into 8 equal parts.
Step 8Sprinkle dry powder on the chopping board, flatten a small dough, roll it into a round piece and put it into the filling.
Step 9Wrap the leek box with lace as shown in the figure. If you want to be simple, just do the first step（ The process of wrapping needs to be completed in hand. It is put on the chopping board for taking photos. Once you find the feeling, it is super fast to wrap it)
Step 10Wrap all the leek boxes in turn.
Step 11Heat the pan, add 1 tablespoon oil, put it into the leek box, cover the pan and simmer over low heat for a while.
Step 12About 2 minutes, until the surface is golden yellow, turn the leek box upside down, continue to cover and simmer over low heat for 2 minutes.
