Ingredients

2 pig feet
30g scallion
200g kidney bean (white)
20G ginger
2 star anise
1 teaspoon Chinese prickly ash
3 fragrant leaves
20 ml Baijiu

Add appropriate amount of warm water to soak kidney beans for 3-5 hours. If you use cold water, you'd better soak them one night in advance. If you don't have time, you don't need to soak them in advance, but the beans cooked in this way are easier to break and affect the appearance

Add enough cold water into the pot, add pig's feet, Chinese prickly ash, star anise and fragrant leaves, and then open fire to remove fishiness

After boiling water, remove it. If there is a lot of blood foam on the surface, wash it with hot water

Add pig's trotters Baijiu, add enough amount of water (more can be put, soup is the essence of this dish) add ginger, Baijiu, salt and liquor.
