Homemade pig skin jelly
It is an essential dish for Northeast Chinese New Year.

Half a catty of pig skinA little green onion
A little ginger
A little cooking wine

Wash the pork skin first.

Cut the clean pork skin into small pieces ten centimeters wide.

Pour cold water into the pot, add two pieces of onion and ginger, and put the pork skin into cold water.

After the water boils, cover the pot and continue to cook for five minutes.

Remove the pork skin. While it is hot, press the skin with one hand and scrape the fat and grease on the skin with a knife with the other hand. Scrape the opposite side of the skin with a knife.

This is the meat skin after scraping the grease. It doesn't look so greasy.

Fat and grease scraped from the skin of meat.

After scraping the fat skin, sprinkle salt on the opposite side and knead it repeatedly in order to knead all the leaked fat.

Then rinse the skin with clean water and prepare to shred.

Put cold water in the pot. The ratio of water to meat skin is 1:3. Put the processed meat skin into the pot and add a little cooking wine.

Bring to a boil over high heat, turn to low heat for an hour, and add a little salt.

When the meat skin is ripe and the soup turns milky white, pour it out into a container and let it stand overnight.
