Directions

Step 1

Step 2

Pour out the oil just in the pot, leave only a little at the bottom of the pot, enough to fry shallots, ginger and garlic, pour in shallots, ginger and garlic, stir fry over low heat until it is slightly yellow and fragrant.

Step 5
Pour eggplant, potato and green pepper into the pot again (no need to add oil). Quickly add the prepared materials (salt, sugar, soy sauce and thirteen spices) over the high fire and stir fry. If there is more juice out of the pot, thicken with starch, sprinkle chicken essence and stir fry out of the pot.
