Step 1A piece of tender tofu.
Step 2Cut into about half the size of mahjong, about 5mm thick, not too thick, not easy to taste.
Step 3Pour in an appropriate amount of corn starch, stick some starch on the surface of tofu, and fry it later. It's crispy and delicious. The same is true for raw meal without corn starch. Or don't bother.
Step 4Beat two eggs into a bowl and stir well.
Step 5Add a spoonful of salt, a small amount of pepper and stir well.
Step 6Two or three shallots, only the green part, chopped.
Step 7Pour an appropriate amount of oil into the non stick pot and heat it over medium heat to a slight heat.
Step 8Put the tofu in the pot one by one. Be careful, or the tofu will break easily. Fry slowly over medium low heat.
Step 9Turn the tofu upside down after frying it a little yellow on one side.
Step 10After the tofu is fried on both sides, pour in the egg liquid.
Step 11Sprinkle the scallion before the egg liquid solidifies.
Step 12Sprinkle a little black sesame.
Step 13Just wait until the egg solidifies. Note that the fire should not be too large, otherwise the bottom is scorched and the surface is not cooked. You can cover the pot and stew.
