I saw a Hunan girl’s recommendation on Zhihu ~ just as I like to eat preserved eggs, imagine it would be very delicious to do so ~ so I decided to try it! I didn’t expect to be very successful at the first time!

250g minced meat
4 preserved eggs
4 red and green pepper
4 small chives
Appropriate amount of onion, ginger and garlic

Step 1
The meat is chopped into minced meat, 4 pieces of Purple Garlic are chopped, I choose to use tender ginger to chop, red and green pepper to cut circles, small chives to cut sections, and 4 preserved eggs to peel for use.

Step 2
Put the cold oil in the hot pot into the green onion, ginger and garlic, saute until fragrant, put in the red and green pepper, stir fry evenly and push it to the side of the pot, fry the minced meat with the remaining oil, stir fry with the green onion, ginger, garlic and pepper at the side of the pot, mix well, and then put in the preserved egg. The preserved egg doesn't need to be cut, directly put it into the pot, stir fry with a shovel while chipping, then put salt, add an appropriate amount of soy sauce and cooking wine, and pour vinegar when it comes out of the pot, Sprinkle with shallots, mix well, put them on a plate ~ work together ~

Step 3
Super fried minced meat and preserved eggs with double pepper are made ~

Step 4
It's really delicious
