Rice noodle fish is a traditional dish of the Han nationality in Xingguo County, Jiangxi Province. It has golden color, rich fragrance, tender and smooth meat, fresh and spicy taste, without fishy smell. It has a long history. As early as the agrarian revolution, Comrade Chen qihan once served this dish and four other dishes to Chairman Mao Zedong. Chairman Mao called it “four stars watching the moon”, which has been handed down to this day.
