Eggplant and beans, eggplant and beans are my favorite dishes. The first time I ate eggplant and beans was in Liuyang steamed restaurant, and every time I went to the steamed restaurant, I had to name a dish.


200g eggplant
200 grams of beans
8 tbsp cooking oil
5g salt
30g garlic
3 chives
Half a red pepper
2 tbsp oyster sauce


Step 1
Remove the tendons and collaterals of beans, cut them into sections, and then wash them

Don't peel eggplant, cut it into thin strips after cleaning, then soak it in salt water for 10 minutes, pick it up and squeeze it dry

Wash the red pepper, garlic and scallion and set them aside

Put the oil in the frying pan, heat it up, fry the beans and remove the oil

Then add eggplant and fry until soft, remove and control oil

Leave a little oil in the pot, stir fry garlic and red pepper to make it fragrant

Pour in the beans and stir fry

Add eggplant, add a little water, salt and oyster sauce, cover and simmer for a while until the juice is almost dry
