10 loaches
Appropriate amount of vegetable oil
Proper amount of salt
5g raw extract
5 grams of soy sauce
10 dried spicy skins
10g ginger
1g pepper granules
15g cooking wine
2 shallots
1g chicken essence

Ingredient: 500g fresh loach

Wash the loach several times. When I buy it, let the fishmonger kill it. Go home and wash the viscera, mix it evenly with salt and cooking wine, and marinate it for 10 minutes, so as to remove the earthy smell and fry it

Peel the ginger, spicy skin and garlic, slice them, wash and mince the shallots

Heat the pan to cool the oil. The oil is 70% hot. Sprinkle a little salt. In this way, the loach can be fried without touching the pan

Fry the loach over medium heat until it is shaped, slowly fry over low heat until both sides are golden yellow, and pick it up

Leave the oil at the bottom of the pot, add onion, ginger, garlic, spicy skin and pepper to stir fry until fragrant

Stir fry the fried loach evenly, stir fry the flavored wine, and some people like rice wine

Stir fry raw and old soy sauce with salt to produce sauce flavor
