500g streaky pork
1 bowl of flower carving wine
Half a bowl of raw soy sauce
1 teaspoon soy sauce
Proper amount of rock sugar
250g shallots
Proper amount of ginger
Proper amount of self-made brine


Step 1
Prepare the materials as shown in the figure. Put the raw and old smoked pork in a bowl. It's best to buy the selected meat in the supermarket. The skin is thin, the fat and weight are moderate, the shallots are cleaned and cut into two sections, and the ginger is peeled and blasted

Boil the water and blanch the streaky pork

Blanch the streaky pork under cold water and then put it into the boiling brine for 20 minutes

After the skin and meat are slightly colored, start the pot

Cut the meat into small cubes, as shown in the picture

Heat the pot, add an appropriate amount of water, fry the syrup until it is yellow, add half a bowl of boiling water to boil, pour the raw and old soy sauce into it, and stir it into juice

Prepare a casserole, use 12 bamboo sticks to lay a mesh anti sticking pot at the bottom of the pot, spread half of the ginger, and then spread the scallion segments with Scallion white, as shown in the figure
