I usually live abroad. The roast duck in Chinese restaurants is Cantonese style. I miss the smell of crispy roast duck very much. The operation of roast duck leg is relatively simple. Ingredients

6 duck legs
2 tbsp soy sauce
2 tbsp soy sauce
2 tbsp cooking wine
1 / 2 tsp salt
1 tsp sugar
2 slices of ginger
1 section of scallion
2 fragrant leaves
4 star anise
1 tsp pepper
1 / 2 tsp chicken essence
1 tbsp honey
1 tbsp white vinegar

Directions

Step 1
Wash the duck legs, soak them in clean water, soak the blood out and drain the water

Mix all the above condiments and make them into juice. You can dip them with chopsticks to taste them. They should be sweet and salty. Salty doesn't matter. Only in this way can they taste delicious

Every duck leg should be massaged in place. If you don't like to use your hands, you can ladle out the soup one by one and pour it through one by one. After a while, turn it over and wait for the duck to turn dark red. About 1 hour later, put it in a fresh-keeping box and refrigerate it for half a day

Take out the pickled duck leg, put the duck skin on the tin foil, put it in the oven with 190 ℃ and bake for 20 minutes. In this way, the duck oil can be roasted to avoid eating too much oil

Use white vinegar and honey to make water and brush it on the duck skin to make it crispy. After brushing, put it into the oven and bake for 10 minutes, take it out and brush with honey water, then brush it every 15 minutes. After about an hour, the duck skin turns dark red. If you like the crisp duck skin, you can wait for a while. When it is slightly black, the taste is the most crisp. If the pickled taste is enough, you can eat it directly. If it is a little light, you can match with ingredients such as sweet flour sauce, and the taste is more fragrant
