I’m from Zhejiang. Every autumn, crabs are the inevitable taste on the table.

Ingredients

Three eggs
10 g ginger
4 tbsp sugar
1 teaspoon cooking wine
A little salt
3 teaspoons white vinegar
A little sesame oil
Proper amount of oil  

Directions

Step 1
Protein isolate and egg yolk

Step 2
Chop ginger and put it in a bowl

Step 3
Add four teaspoons sugar, three and a half teaspoons vinegar, one third of salt, one teaspoon cooking wine and two drops of sesame oil. Stir well to make the sauce

Step 4
Heat the oil in a hot pan, heat the oil, pour in the egg white, add half of the sauce, stir fry until it's qualitative, then put it on a plate

Step 5
Repeat the above steps, stir fry the egg yolk, pour in the remaining half of the sauce, remember the fire should be small, repeat again, don't fry too old

Step 6
Fry the egg yolk out of the pot and cover it with the protein
