Race crab is a dish made of yellow croaker, eggs and various seasonings. The flesh of yellow croaker is as white as crab meat, and the eggs are as golden as crab yolk. This dish is soft, tender, smooth and delicious. It’s not crab, it’s better than crab, so it’s called “match crab”. I didn’t use yellow croaker in the crab race I made today. But with the most common eggs and shrimp, the method is also super simple, but has a unique flavor.

Ingredients

Three eggs
A little shrimp skin

Directions

Step 1
Rinse the dried shrimps and chop them into small pieces. Chop the scallions and ginger and set aside

Step 2
Put onion and ginger into a bowl, add soy sauce, yellow rice wine, vinegar, sugar and salt, mix well to make sweet and sour juice

Step 3
Knock the eggs into a bowl, add a little onion, ginger and shrimp, and break up evenly

Step 4
Heat the pan, drain the oil, pour in the egg, and quickly spread it with chopsticks until it condenses

Step 5
Heat the frying pan, put the flavor juice mixed in advance and bring to a boil, then put the eggs down and stir well
