Race crab is a dish made of yellow croaker, eggs and various seasonings. The flesh of yellow croaker is as white as crab meat, and the eggs are as golden as crab yolk. This dish is soft, tender, smooth and delicious. It’s not crab, it’s better than crab, so it’s called “match crab”. I didn’t use yellow croaker in the crab race I made today. But with the most common eggs and shrimp, the method is also super simple, but has a unique flavor.
