home made chorizo


2.5 pounds pork shoulder
2 pounds chicken thigh
0.25 pounds lard
2 tablespoons sea salt
1 cup peppers, roasted and chopped
1 cup fresh cilantro, chopped
1 piece hot pepper. chopped
6 pieces garlic cloves, chopped
1/2 cup dry kelp
1 teaspoon each cumin, coriander, mexican oregano
1 tablespoon dry carrot powder
1/4 cup lime juice
1/2 cup corn grits


Step 1
coarse grind all meat ingredients to mix

Step 2
chill meat overnite

Step 3
blend all remaining ingredients

Step 4
repeat grind to mix all ingredients

Step 5
break into 1/4 pound increments

Step 6
vacuum pack and freeze
