Crystal shrimp dumpling is one of the famous Cantonese tea house snacks. The shrimp dumplings are crystal clear, the stuffing is faintly visible, and it tastes smooth and tender, which makes people salivate. It’s a rare delicacy with color and material.

Ingredients

70g Chengfen
20G corn starch
50g pork stuffing
30g corn kernels
20G peas
20G mushroom
25g Argentina red shrimp
10g scallion
1 teaspoon soy sauce
1 tbsp cooking oil

Directions

Step 1
Prepare ingredients: 70 grams of Chengfen, 20 grams of corn starch, 50 grams of pork stuffing, 30 grams of corn kernels, 20 grams of mushrooms, 20 grams of peas, 25 grams of Argentine red shrimp, 10 grams of scallion;

Step 2
Blanch corn kernels and peas for 1 minute, drain water and remove;

Blanch the mushrooms for about 1 minute, drain the water and take out;

Ordinary children don't like granular stuffing very much, so I put corn, peas and mushrooms together in the cooking machine to crush;

Add 10 g scallion, 1 tbsp cooking oil and 1 tbsp soy sauce to the pork stuffing, stir well;

Then put the crushed corn, peas, mushrooms and red shrimp meat into a bowl and stir well;

Add corn starch into the clarified powder and mix well. Slowly pour in 110g, 100 ℃ boiling water, pour and stir until the flour paste into snowflake shape, try to be even, do not have dry noodles without water. Knead the dough and wake up for about 10 minutes;

Take out the dough, rub it into long strips, and cut it into evenly sized tablets;

Take a small dose and knead it round and flatten it. Use a small board to press the small dose into a round shape (shrimp dumpling skin should be wrapped and pressed now, don't do too much at one time, otherwise it will dry and crack easily);

Put the right amount of stuffing into the shrimp dumpling skin, as shown in the picture;

Starting from one side, squeeze the shrimp dumplings tightly, as shown in the picture( When making a bag, keep your hands light, or you will easily crush the skin.)

After all the shrimp dumplings are kneaded, put them on the carrot slices one by one, as shown in the picture( This is a good way to prevent sticking.)

Boil water on the pot, heat for 10-15 minutes, then turn off the fire;
