Baiyun chicken feet is one of the traditional appetizers in Guangdong. Later, it was found that the chicken feet washed with spring water were more delicious than those washed with tap water and well water, and the pickled chicken feet were more crisp. Therefore, people named this kind of chicken feet “Baiyun chicken feet”.
800g chicken feet
2 red peppers
6 slices of ginger
100g white granulated sugar
25 grams of salt
300 ml white vinegar
60 ml Baijiu

Step 4Add chicken feet into the pot and add the right amount of water without chicken feet. Pour into 30ml Baijiu and add ginger slices.

Step 7Pour 1000ml water into the pan, add white sugar, salt, white vinegar, 30ml liquor, cook it in a big fire and cool it.

Step 9Remove the chicken feet from the ice water and put them in a casserole or glass container with sweet and sour sauce together with the red pepper cut into circles
