1000g chicken feet
200g pickled pepper
A carrot

A green onion
50 ml Baijiu
50ml white vinegar

Step 1
Wash the chicken feet first, cut off the nails and cut more. Then change the claws into small pieces, wash them, add water to soak the chicken claws, put some wine inside, soak for half an hour, and wash the blood and dregs

Step 2
Use a teaspoon of Baijiu and a teaspoon of vinegar, stir the chicken feet vigorously, and marinate for 5 minutes, then rinse thoroughly. The pot is filled with water, chicken feet, star anise, pepper and a tablespoon of Baijiu. The fire is boiled. Boil in 5 minutes and then turn to a small heat for 5 minutes. Then remove the chicken feet and let the cold water rinse repeatedly, only remove the colloid that is washed off the surface. Then soak it in a large basin of ice water.

Step 3
1. In another pot, pour three fifths of the same amount of water into the pickle jar. Add pickled pepper water, cinnamon, fragrant leaves, star anise, Chinese prickly ash and Chaotian pepper (if any)

Step 4
After the soup has cooled thoroughly, put in the claws soaked in ice water, taste the saltiness of the soup, and adjust with salt or water. Then cover the mouth of the jar with a layer of plastic film and cover it. It can be eaten after 24 hours in the refrigerator. If it is stored for more than 2 days, it will taste purer
