Braised pork is the most homely dish. No family can’t cook it, so it’s the most suitable for sticking autumn fat. I chose yam to match with braised meat. Yam has the effects of Tonifying Qi and blood, tonifying deficiency and anti-aging, strengthening beauty, nourishing yin and Yang. It is especially suitable for tonic consumption in autumn and winter.

500g streaky pork
300g yam
1.5 teaspoons salt
1 small handful of rock sugar
2 slices of ginger
1 octagonal
1 cinnamon
1 tbsp cooking wine
1 tbsp soy sauce
1 / 2 tbsp soy sauce
2 fragrant leaves
1 tbsp vegetable oil
Proper amount of water

Step 1
Preparation materials: streaky pork, yam, ginger slices, star anise, cinnamon, fragrant leaves and rock sugar

Step 2
Cut the streaky pork into several large sections, add ginger slices into the cold water pot and boil for a few minutes to drain the water and blood

Step 3
Wash the cooked streaky pork with warm water, dry the surface with kitchen paper and cut into small pieces (washing with warm water will not make the meat expand and contract, and the taste will become firewood. Cooked meat is easier to cut)

Step 4
Pour a little vegetable oil into the pot, pour in the streaky pork and stir fry until the oil comes out (the streaky pork itself will come out without too much oil in the pot. Stir fry for a period of time, and the fat meat will come out, but the frying time can not be too long, and the meat will become firewood after a long time)

Step 5
Turn to medium low heat, continue to add rock sugar and stir fry until the streaky pork is colored

Step 6
Add cooking wine, raw soy sauce, old soy sauce, ginger slices, star anise, cinnamon, fragrant leaves and salt in the pot, put an appropriate amount of hot water to boil, turn to low heat and stew for about 1 hour until the pork is soft and rotten

Step 7
Peel and cut the hob block of yam and soak it in water for standby (soaking in water can prevent oxidation)

Step 8
After the pork is soft and rotten, add yam and continue to stew until the yam is soft and rotten

Step 9
Finally, the juice can be collected by high fire (the juice will make the taste stronger and the color more beautiful)
