Thick and alternate streaky pork is bought fresh at the vegetable market in the morning and stewed slowly over a low fire for 30 minutes. The potatoes are full of soup and meat aroma. The pork is fat but not greasy. It’s delicious! Wuxi people eat sweet. Maybe people who eat spicy food are not used to it. They can use less rock candy and children eat it, so they don’t have any big stuff! Seasoning can be adjusted according to personal preferences!
300g streaky pork
3 ginger slices
3-4 small pieces of rock sugar
Proper amount of water
8-10g cooking wine
30 ml corn oil
1 tablespoon and a half salt
5 grams of soy sauce
Step 1Wash the streaky pork, put half a pot of water in the pot, put the streaky pork, cover, open the fire, boil and blanch.
Step 2After blanching, wash the meat twice with cold water, cut it into blocks of appropriate size, and then rinse it and drain the water for standby. Ginger slices.
Step 3In a clean anhydrous pot, heat it over high heat and pour in corn oil.
Step 4After the oil is warm, add ginger slices and saute until fragrant.
Step 5Put in ice candy. Turn the fire down. Stir fry the rock sugar with a spatula.
Step 6Fry slowly, over a low heat. Be sure to fry over a low heat until it melts completely, amber.
Step 7Pour in streaky pork, turn to medium heat and start to stir fry with a spatula.
Step 8Stir fry for 3-5 minutes and color evenly.
Step 9Add water and Mince Pork. Cover the pot and simmer over medium heat.
Step 10After five minutes, add cooking wine. Stir well and continue to stew.
Step 11During the stew, peel the potatoes, clean them and cut them into small pieces as shown in the figure.
Step 12After stewing for 10 minutes, add a little old smoke. Stir well and the color will look better. Turn the heat down and continue the stew.
Step 13When stewing for 18 ~ 20 minutes, drain the soup slightly and add potato chips. Stir fry evenly with a spatula, immerse the potato pieces in the soup, continue to cover and simmer over low heat.
Step 14You can stir fry twice during the period. The soup slowly dwindled.
Step 15Simmer for 25 minutes, add salt, stir well and season.
Step 16Stew for another five minutes, the potatoes are soft and waxy, and the soup is almost dry.
Step 17Put the plate out of the pot, sprinkle some scallion to make a color. If you don't like it, you can not put scallions.
