Braised pork with dried bamboo shoots

Ingredients
7 dried bamboo shoots500g pork
1 tablespoon vegetable oil
1 fragrant leaf
1 tbsp pepper granules
1 tablespoon rock sugar
1 tablespoon cooking wine
2 tablespoons soy sauce
3 slices of ginger
3 garlic
3 dry red peppers
3 shallots
2 star anise
Directions
Step 1
Soak dried bamboo shoots for 12 hours and change water once in the middle
Step 2

Sliced pork
Step 4
Put the pork into the pot in cold water and blanch it
Step 5
Add vegetable oil into the pot, add rock sugar and stir fry over low heat to produce caramel color

Add pork and stir fry evenly

Add cooking wine, soybeans, soy sauce and stir fry well. Add ginger and garlic slices, shallots, dry red pepper, star anise, fragrant leaves and pepper granules and stir fry until fragrant
Step 8
Add an appropriate amount of water and bring to a boil. Turn to low heat for 30 minutes
Step 9
Add bamboo shoots, cook over medium heat for 30 minutes, and then collect the juice over high heat
