500g pig intestines
2 star anise
More than 20 pepper grains
1 grass fruit

Step 1
The cleaning process of pig's large intestine is as follows: turn the pig's large intestine to the slippery side, rub it repeatedly with salt and clean it for several times, wash it with vinegar for the last time, remove the fishy smell, turn over the oily side to remove the excess oil, finally boil a pot of boiling water, boil the fat intestine in the pot for about 5 minutes, turn off the fire, take it out, wash it with cold water and drain it.

Cut the cooked fat sausage into pieces and set aside.

Prepare one fruit, two star anise, more than 20 pepper, 2 fragrant leaves, sliced ginger, peeled garlic, and put more garlic to remove the fishiness.

Heat oil in the pot. First put fragrant leaves, grass fruits, pepper, star anise and ginger slices.

Put the fat intestines into the pot and stir fry for 2 minutes. Add a tablespoon of bean paste.

Simmer the fat intestines slowly over low heat to collect the juice, and cook the fat intestines with bean paste and cooking wine to make the fat intestines taste better.

Put the fat intestines into the pressure cooker, add an appropriate amount of water (just above the surface of the fat intestines) and cook until the pressure cooker is aerated for 15 minutes.
