800g streaky pork
2 tablespoons soy sauce
20 pepper

Step 1
Streaky pork used to make braised pork is very important in selection. Too thin streaky pork tastes very firewood, and too fat streaky pork will be a little greasy. Choose streaky pork that is three times fat and seven times thin, and the fat should be even.

Get the spices ready. Cloves, grass fruits and nutmeg can be kept if they are not available at home.

When stewing for 30 minutes, add 3 tablespoons of aged vinegar. Vinegar must be added more than ten minutes before coming out of the pot. Aged vinegar can improve freshness and relieve greasiness. Meat with vinegar will not be greasy. Once I forgot to add vinegar, braised meat is very greasy. After adding vinegar, the smell in the house will become more mellow and rich.

Add a little starch water before coming out of the pot to make the soup thicker.
